2. Handmade Traditional Philo Workshop, 30, Vernardou

Travelers will be able to see in the old town of Rethymno, a Venetian
mansion of 17th century where is Giorgos Hatziparaschos traditional philo
Workshop, the oldest of its kind for making ''kantaifi'' and ''baklava'' philo
for 63 years now. While the ingredients are simple - flour, water and some salt
- the proportions according to Hatziparaschos took years of testing.
Traditional philo is an essential ingredient for traditional syrupy sweets
dipped in honey, such as kadaifi and baklava. If you are lucky, you will watch
the master on the job. A fluid mixture falls into a special machine at the back
room that butter aromas are spreading in space and a hot copper pan doesn't
stop turning. Above the flames, hundreds of thin and baked strings of kadaifi
are created. Sprinkled with the right balance of cinnamon and chopped walnuts,
kadaifi is one of the most favorite sweets. 

3. Ta 2rou, Panou Koronaiou 28

Homemade Cretan cuisine with local ingredients in a retro space full of
photographic memories of old Rethymnon, in a quiet alley of the old town. At
this stop, you will meet the owner Mr. Gregory who is really nice, friendly and
kind, a genuine personality as if he is from a movie. His little traditional
hospitable ''mezedopolio'', is a real treasure. You can feel like a local,
drinking his homemade aromatic raki and tasting the qualitied and delicious
''mezedes''. 

4.Olive Oil Products, Souliou 8

After a short walk, we will head to a small shop with Cretan natural products
so as to try the taste of genuine Cretan thyme honey and learn the history as
well as the collecting honey process. It is very important that it is produced
in the mountains. Especially when these mountains belong to a truly unspoiled
environment away from the urban pollution, in a local ecosystem of extremely
dense aromatic flora of endemic, self-sown flower plants, trees and shrubbery.

It is the most appropriate place to continue with the best
''loukoumades'' in the whole city! Incredibly crunchy from the outside, but so
soft inside, sprinkled with sesame and cinnamon powder...simply amazing! 

6.The Venetian Fortezza, Rethymnon

Up to this point, you will be fully informed about the history of our
town all the monuments,that we have passed by and the secret local spots you
should definitely visit. The end of the tour will be in front of the gates of
the Fortezza castle where you will have time to wander around and get fascinated
by the view. Due to the fact that the escort of this tour is not considered as
a guide of the State, it is forbidden to enter with you inside the castle. If
our travelers wish to have an
official guide we would be happy to book one upon communication. Enjoy!

A quiet "kafeneio"

Enjoy a traditional coffee with a piece of home-made pies.

Starting off, we will visit a beautiful "kafeneio” located in a unique spot inside the old town of Rethymno. This small, unfrequented square with its running fountain will be our first stop. There, we will enjoy an authentic Cretan breakfast, which consists of a traditional Greek coffee or juice and a handmade cheese pie (as we called it "sfakianopita") covered with organic thyme honey. We will start by discussing the main points of our visit; an introduction to the historical imposing monuments, traditions, customs, and the connection to Cretan Gastronomy will follow, as we all enjoy our Cretan breakfast in the calm atmosphere of this quiet cafe.

Thyme honey tasting

Discover natural Cretan products to taste real Cretan thyme honey and learn about the history and process of honey collection.

After a short walk, we will head to a small shop with Cretan natural products so as to try the taste of genuine Cretan thyme honey and learn the history as well as the process of collecting honey. Mr Matheos, who owns this little traditional shop, will assist us in his own kind way. We can taste some types of honey, while we are in the shop; keep in mind that it is produced in the mountains; this element makes the taste so much different from the other kinds. Especially when these mountains belong to a truly unspoilt environment, away from the urban pollution, in a local ecosystem of extremely dense aromatic flora of endemic, self-sown flower plants, trees and shrubbery.

Giopros Hatziparashos, Handmade Traditional Philo Workshop

Meet the last phyllo master at his workshop!

After that, we will be able to see right through the heart of Rethymno; a Venetian mansion of the 17th century houses “Yorgos Hatziparaschos” phyllo workshop, the oldest of its kind. He is famous for making phyllo for more than 63 years now. Traditional phyllo is an essential ingredient for traditional syrupy sweets, such as kantaifi and baklava. While the ingredients are simple - flour, water and some salt - the proportions according to Mr. Hatziparaschos took years of testing. If we stand lucky, we will observe the master on the job! A fluid mixture falls into a special machine in the back room, where butter aromas fill the air; in the meantime, Mr. Yorgos' hot copper pan doesn't stop turning. Above the flames, hundreds of thin and baked strings of kantaifi are created. Sprinkled with the right balance of cinnamon and chopped walnuts, kantaifi is one of the most favorite sweets of the Greeks. The taste cannot described with words; you just have to try it!

Our next stop will be a “tavern” based on a building from the Venetian era that was occupied by the Ottomans. At this stop, we will taste the best Cretan "mezedes" tapas, a small traditional dish, accompanied by raki. It is a small, very friendly bar with a unique atmosphere where you can relax and drink delicious cocktails in the evening. Until then you will be fully informed about the history of our city. if you wish to visit the fortress of Fortezza after the end of the visit our guide will be happy to help you and accompany you to the entrance of the fortress.
